Roasted Garlic Cauliflower Hummus

Hummus is a favorite snack, and I still enjoy it regularly. While hummus is traditionally made with chickpeas, you won’t miss them here because I use cauliflower in their place. This keto friendly roasted garlic cauliflower hummus is just as creamy and flavorful as traditional hummus, and it’s easy to make too.

Start by placing the cauliflower and garlic on a baking sheet and drizzle with olive oil, salt, and pepper. If you are using a head of cauliflower, cut it up into florets before roasting. Roast in a pre-heated oven for 35-40 minutes. Midway through, toss the cauliflower and garlic so they cook evenly. You will know it’s done with the cauliflower is slightly browned and garlic is soft.

Next, place the cauliflower and garlic in a food processor with the remaining ingredients. Pulse until smooth. Now turn on the food processor and slowly add the olive oil until it is fully incorporated.

Your roasted garlic cauliflower hummus is now ready to eat! You can top it with a drizzle of olive oil and paprika, or enjoy as is. Serve with low carb veggies or along with keto bread or keto crackers. This hummus would be delicious on top of a toasted Keto Everything Bagel. You can also use it in place of mayo in many recipes (think: deviled eggs.)  Yum!

Instructions

  • Preheat oven to 400 degrees.
  • Place cauliflower and garlic on a baking sheet and drizzle with 1 tablespoon olive oil, salt and pepper. Roast for 35-40 minutes, tossing midway, until cauliflower is slightly browned and garlic is soft.
  • In a food processor, combine roasted cauliflower and garlic, tahini, and lemon juice. Pulse in food processor until smooth. Turn on the food processor and slowly add ¼ cup olive oil until it is fully incorporated.
  • Transfer hummus to a serving bowl and top hummus with olive oil and paprika if desired. Serve with any of your favorite low carb vegetables or keto crackers.
