A delicious and hearty low carb and keto friendly taco soup that is sure to be a family favorite! This Creamy Keto Taco Soup is packed full of flavor. You can adjust the level of spice based on your family’s preference. From mild to spicy, you can dial this recipe in to please the whole family!

I like one-pot meals, and this is definitely one of those. And this recipe is quick and easy to make. It requires just 15 minutes of prep time, and only requires a half hour of simmering time for the flavors to all come together. Dinner on the table in just 45 minutes!

Start by heat the oil in a large pot or dutch oven over high heat. Saute beef, onion, garlic, and green bell pepper for 7-8 minutes. Add diced tomatoes, green chilis (or jalapenos), cream cheese, and taco seasoning to the pot. Stir until cream cheese is melted and mixed throughout.

Next, pour in the chicken broth and stir. Allow the keto taco soup to simmer about 20 minutes until thickened. Make sure to stir occasionally to avoid the bottom burning.

This soup tastes delicious as is or top with fresh toppings. Set out a variety of sliced avocado, sour cream, shredded cheese, fresh cilantro, jalapeno, and fresh lime wedges. Let everyone make their own bowl of soup and choose their own toppings. Now enjoy this hearty meal in a bowl!

  • Pour in chicken broth and reduce heat to low. Simmer 15-20 minutes, until soup has thickened. Stir periodically to avoid the bottom from burning.
  • Serve warm and top with toppings of your choice. I like a variety of freshly sliced avocado, sour cream, shredded cheese, fresh cilantro, jalapeno, or fresh lime wedges.

Notes

Store soup in an airtight container in the fridge for up to 4 days.

    I made this recipe for my family of 4 and I will say, the bowls were licked clean! The kids usually want crackers with their soup, so I brushed 2 low carb tortillas (2 net carbs per tortilla), with olive oil and baked @ 350 for 12 min. I took a pizza roller and cut it into 1/4″ strips and it made a great crunchy, low carb topping for the soup.
