Preheat oven. Line 2 large baking sheets with parchment.

Place cauliflower on baking sheet and drizzle with olive oil. Season with salt and pepper. Toss to coat evenly and spread into a single layer. Roast in the oven. Let cool.

In a large bowl, combine all other ingredients. Add cauliflower and mix together. Top with crumbled bacon. Refrigerate.
