Mix egg, mozzarella, almond flour, and baking powder in a bowl.
Pour half of the egg mixture into the prepared waffle iron. Close the waffle iron and cook per manufacturer’s instructions.

Store cooled chaffles covered in the fridge and reheat by popping them into the toaster or air fryer for about 4-5 minutes until desired temperature.If you would like to use a mini waffle iron, measure the batter for each waffle per manufacturer's instructions.
