Mix eggs, mozzarella, almond flour, baking powder, and garlic powder in a bowl.
On the prepared waffle iron, sprinkle 2 tbsp of the cheddar cheese in a thin layer and ½ of the diced jalapeno. Then, ladle ½ of the egg mixture into the center of the waffle iron on top of the shredded cheese and jalapenos. Close the waffle iron and cook per manufacturer’s instructions. Repeat for the second chaffle.

Store cooled chaffles covered in the fridge and reheat by popping them into the toaster or air fryer for about 4-5 minutes until desired temperature.If you would like to use a mini waffle iron, measure the batter for each waffle per manufacturer's instructions.
