A delicious and simple pepperoni pizza chaffle

Servings: 2 people
- 2 large eggs
- 1/2 cup mozzarella
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp garlic powder
- 1/4 cup italian blend shredded cheese or more shredded mozzarella
- 1 oz mini pepperoni or regular size pepperoni, chopped into small pieces
- 1/4 cup homemade or store bought marinara sauce for dipping
Preheat waffle iron and spray with cooking spray.
Mix eggs, mozzarella, almond flour, baking powder, and garlic powder in a bowl.
On the prepared waffle iron, sprinkle 2 tbsp of the shredded italian blend cheese in a thin layer and ½ of the mini pepperoni. Then, ladle ½ of the egg mixture into the center of the waffle iron on top of the shredded cheese and pepperoni. Close the waffle iron and cook per manufacturer’s instructions. Repeat for the second chaffle.
Serve with marinara sauce for dipping.
Store cooled chaffles covered in the fridge and reheat by popping them into the toaster or air fryer for about 4-5 minutes until desired temperature.
If you would like to use a mini waffle iron, measure the batter for each waffle per manufacturer's instructions.
