Tequila Lime Shrimp: It’s What’s Grilling Tonight

Grilling season is here! Whether you do it outdoors or inside, it’s a quick and easy way to get a meal on a the table. This Tequila Lime Shrimp recipe only takes about 15 minutes to prep and cook. You do have to let it marinade for 15-30 minutes, but that only takes a minute to toss together.

Why tequila? Using alcohol as a marinade helps keep the meat extremely moist and tender. It doesn’t take long to marinade shrimp – you don’t want to leave it in the fridge over night or for too long.

Preparing Tequila Lime Shrimp

In a large bowl, begin by combining the avocado oil, tequila, zest of a lime, chili powder, and prepared garlic. Add the shrimp and toss it all together. Cover the shrimp and let sit in the fridge for 15-30 minutes.

While you are waiting, soak the bamboo skewers in water and heat grill over high heat. Spray the grates with cooking spray.

Thread the shrimp onto the skewers, about 4 shrimp per skewer. Pour the remaining marinade in a small sauce pan and add the juice of one lime to it. Cook over medium high heat. Once the sauce is boiling, continue to cook for 5 minutes, stirring often. Stir in the butter until it has melted and sauce has thickened.

While the sauce is cooking, heat the grill over high heat and spray grates with cooking spray. Once the grill is hot, grill the shrimp for 3-4 minutes per side until shrimp are pink and opaque.

Take the shrimp off of the grill and place on a platter. Brush sauce over shrimp and garnish with cilantro.

The recipe serving size is more of an appetizer portion, but you can have two skewers and a fresh green salad to make it a meal!

  • While the sauce is cooking, heat the grill over high heat and spray grates with cooking spray. Once the grill is hot, grill the shrimp for 3-4 minutes per side until shrimp are pink and opaque.
