Have pumpkin pie all year round! This non-bake keto pumpkin pie bites recipe has all of the flavors of a delicious pumpkin pie. It’s also made with 6 simple, keto-friendly and dairy-free ingredients. You’ll get all the flavors of a pumpkin pie without the extra calories and carbs!
This recipe couldn’t be easier to make. In a large mixing bowl, mix all of the ingredients together until well incorporated. Place the bowl in the freezer for about 20 minutes so batter is firm but not frozen. While waiting for the batter to firm up, prepare a small baking sheet lined with parchment or wax paper.
Once the batter is ready, scoop 1 tablespoon of batter and roll in between your hands to form a ball. For an additional sweet little crunch, roll the ball in granulated Swerve. Place each ball onto prepared baking sheet.
Put the baking sheet back into the freezer until pumpkin pie bites are no longer soft. When you’re ready to eat keto pumpkin pie bites, take one or two out of the freezer and allow them to thaw for about 5-10 minutes for the perfect consistency.
These are sure to satisfy your pumpkin-spiced sweet tooth. The recipe makes 8 pumpkin pie bites, but you can always double the recipe to make even more. Enjoy!

October 16, 2019 at 7:11 pmthese pumpkin bites look GREAT!! question: i thought net carbs were carbs minus fiber. how do you get 2 net carbs with this equation — it looks like it should be 4 net carbs each? thanks for clarifying!! LOVE your site and i’m 36 pounds down!! :o)

October 22, 2019 at 6:05 pmHey there. The other 2 net carbs are from the erythritol, therefore these are 2g net carbs per serving.

November 3, 2019 at 9:55 pmCan’t wait to make these!! I’m having trouble finding brown swerve 😕 Any other suggestions??
Suzanne
December 11, 2019 at 6:25 amSometimes I have a hard time finding Brown Swerve at the local grocery stores as well. Can you find Granulated Swerve? That will give them the same texture, but not the exact same flavor. However, you can also order Brown Swerve on Amazon.

October 26, 2021 at 8:33 pmI can’t wait to make these! Can I use almond flour in place of coconut flour? I have all the ingredients except for coconut flour. Thank you for sharing this recipe

October 31, 2021 at 9:27 amI haven’t tested it without the coconut flour, but you can play around with what you have! Coconut flour is a little hard to remove from some recipes because its a much more dry and binding flour than almond flour.
