If you do enjoy lamb chops, you’ll definitely want to try this recipe for Lamb with Mint Chimichurri. Bonus points that they cook so quickly and you’ll have dinner on the table in no time at all!
If you’re not familiar with chimichurri, I bet you’ll love it! It’s an uncooked sauce traditionally made of finely chopped parsley, minced garlic, olive oil, oregano, and red wine vinegar. This chimichurri also includes fresh mint as well.
All of these flavors play well together. Because of the fresh herbs, it has a refreshing taste, and the strong garlic makes it pungent, while the red vinegar makes it a bit tangy. There’s a lot of flavor in this sauce! It’s easy to make and you can serve it on any type of meat you’d like.
How To Prepare Lamb Chops with Chimichurri
Start by making the mint chimichurri. Put the mint leaves, parsley, garlic, red pepper flakes, salt, and pepper in a food processor. Pulse together until the mint and parsley are finely chopped. If you’d prefer, you can chop the mint and parsley by hand and mince the garlic. Stir in olive oil, red wine vinegar, and lime juice. Taste and adjust red pepper flakes, salt, and pepper to your preference. Place the sauce in a covered container and put it in the refrigerator while you prepare the lamb.
Heat a large skillet or grill pan over high heat and spray with cooking spray. Season the lamb chops with salt and pepper and cook for 6 minutes on the first side. Flip the chops and cook an additional 3-6 minutes on the second side depending on the doneness that you like your lamb. Timing will be 3 minutes for rare, 4 for medium/rare, 5 for medium, and 6 for medium/well.
Take the chops off of the heat and let them rest for 5 minutes before serving. Give the prepared chimichurri a quick stir and equally distribute the sauce over each chop, about a ¼ cup on each. Now enjoy!
