White Chocolate Raspberry Bark: The Perfect Holiday Treat!

I love this super simple recipe for White Chocolate Raspberry Bark! It’s crunchy, a little sweet, a little salty, and hard to stop eating once you start! If you’re a Trader Joes fan, it’s the perfect place to find all of these ingredients – the freeze dried raspberries can be a bit difficult to find in some areas.

How To Make White Chocolate Raspberry Bark

Start by lining a sheet pan with parchment paper or a silicone mat.

Place the white chocolate chips and coconut oil in a medium mixing bowl and microwave for 1 minute. Take the bowl out of the microwave and stir the chocolate chips together with a spoon until smooth. This is also going to give you your arm workout for the day so you can skip arm day at the gym 😆.

Pour the white chocolate onto the prepared sheet pan and use a rubber spatula to spread it out into an even layer that is about ¼ inch thick. Next, sprinkle the pistachios and coconut chips evenly over the chocolate, using the spatula to gently press the toppings into the chocolate. Break the raspberries up with your fingers over the chocolate and sprinkle them onto the chocolate. Use your fingers to lightly press them into the sticky part of the chocolate.

Now place the sheet pan into the freezer for at least 20 minutes to harden. Break the bark into smaller pieces and enjoy!

This Raspberry White Chocolate Bark can be stored in an airtight container in the fridge for up to 3 weeks, but I don’t think it will last that long!
