If you have my first cookbook, Simply Keto, then you know that my family loves pizza! After we perfected personal keto pizzas, I shared other pizza recipes for low carb keto pizza egg cups and pizza chaffles. And now it’s time to share this recipe for Keto Pizza Bites!
I’m a big fan of recipes for bite-sized recipes because they make many servings, are easy to take-on-the go, and satisfy your cravings.
This recipe is ready in just over 30 minutes, and takes only 15 minutes to prep. All of the ingredients are bought pre-made, so there’s almost no work except building your pizza bites!
Start by preheating the oven to 400 degrees. Spray a standard sized muffin pans with cooking spray. You can also use a silicone muffin pan – the pizzas will come out easier and they’re also easy to clean up.
Next, mix all of the crust ingredients together in a bowl until well combined. Evenly distribute the cauliflower mixture into each well of the muffin tin, using about 2 heaping tablespoons in each one. Use your fingers to press the cauliflower into the bottom of the muffin pan to make an even layer.
Bake for 12 minutes until crust is slightly golden. Take the muffin pan out of the oven and top each crust with 1 teaspoon of marinara sauce, 1 tablespoon of mozzarella cheese and 1-2 tsp of pepperoni. Bake for an additional 8 minutes until the cheese is melted. Now enjoy these delicious keto pizza bites!
Get creative the next time you make these pizza bites and consider using different meats (or no meat!), add your favorite keto-friendly veggies, or try different cheeses or sauces. Just remember it will change the nutritional values, so you will have to recalculate those.
