This recipe for keto tiramisu allows you to make a homemade, delicious dessert for two with only 13 mins of prep time! This yummy, chilled dessert is simple enough to make any time. It’s a pretty dessert, so you can also serve it to guests after a nice meal, too.
It may look like the recipe calls for a lot of ingredients, but don’t worry: you probably have almost all of them in your kitchen already. Mascarpone is an Italian fresh cheese, somewhat similar to cream cheese. You’ll most likely find it in the deli section or specialty cheese area at your grocery store.
You’ll start off by making the mug sponge cake. Add all of the dry ingredients for the sponge cake in a 16-ounce microwave-safe mug and mix well with a fork. Now add the melted butter, egg, and vanilla and use the fork to combine. Microwave for 1 minute 25 seconds, or until the cake is set and the center is no longer jiggly.
Once it’s done, carefully remove the mug from the microwave (it’ll be very hot!) Run a knife around the edge of the cake and transfer it from the mug to a cutting board. Cube the cake into 1-inch pieces and divide it into 4 equal portions.
It’s easy to make the mascarpone cheese filling. Simply whisk together all of the filling ingredients in a bowl until smooth and set aside. Make the coffee soak by combining coffee and brandy in a separate bowl.
Now it’s time to assemble the keto Tiramisu parfaits! Have on hand two glasses (stemless wine glasses, parfait glasses, or mason jars will all work well). In each glass, take one portion of the spongecake and quickly soak each piece in the coffee mixture and then layer in one of the glasses.
Next layer about 2 tablespoons of the mascarpone filling on top of the soaked sponge cake. Sift ½ teaspoon of cocoa powder on top of the filling. Repeat once more to create a second layer of the soaked sponge cake, filling, and cocoa powder.
Place parfaits in the fridge and let sit for at least one hour, up to 24 hours, before serving cold or at room temperature.
