Iced Coffee Popsicles: An Icy Sweet Treat!

If you’re anything like me these days, I’m all about coffee in all forms. Hello quarantine and homeschooling! With the temperatures climbing, I thought it would be fun to create these simple and creamy iced coffee popsicles. Bonus points that each popsicle only has 2 net carbs!

Can you believe this recipe only takes 10 minutes to put together? Just combine the cream and almond milk in a large microwave-safe liquid measuring cup or mug. Microwave for 1 and a half minutes. The mixture should be hot, but not boiling. Use caution when removing the measuring cup from the microwave to prevent any accidental burns.

Next, add in the stevia, vanilla, and espresso powder. Gently mix everything together.

Pour the coffee mixture  into 4 popsicles molds, following manufacturers instructions. I love to use silicone molds because they make it super easy to pop the popsicles out. Freeze the iced coffee popsicles for at least 3 hours. Now enjoy this icy cold, sweet treat!

    Please tell me about the instant espresso powder. On Amazon there are some with other ingredients, some instant espresso powders for baking, too many choices without enough information to help me decide. Which brand do you use? Can you link it please? Thanks! :~)
