When you think about tuna casserole, you probably think of noodles in a creamy sauce with light, flavorful tuna in the spotlight. This keto tuna casserole is just like the casserole you remember eating as a kid and tastes so delicious you won’t even miss the noodles!
Dinner will be on the table in just 30 minutes because this is a quick and easy recipe that you prep in just 15 minutes. Since the tuna is already cooked, it cooks quickly – in just 15 minutes. It’s perfect for busy weeknights or lazy weekends when you don’t feel like cooking and really want comfort food!
Start by preheating the oven to 350 degrees. Add the butter to a medium-sized saucepan over high heat. Once the butter melts, add the onions and celery. Saute for about 7 minutes, then add the mushrooms.
When the mushrooms have cooked for 5 minutes or so, add the cream cheese. Stir to combine, and once it melts, remove the pan from the heat.
Next, combine the drained tuna, cheddar cheese, salt, pepper, and the mushroom mixture in a large bowl. Stir together until combined. Spoon the tuna mixture into a casserole dish.
In a small bowl, combine the ground pork rinds, parmesan cheese, parsley, and butter. This will make a faux panko topping without the bread crumbs. Sprinkle topping over the tuna mixture.
Bake for 15-20 minutes until the cheese has melted and the topping is browned.
If you’re like me and like an extra crispy topping, you can also place the casserole under the broiler for 2 minutes once it is done baking. Keep an eye on it, so your keto tuna casserole topping doesn’t get too brown!

I doubled the mushrooms (for the pasta feel) and added olives for the flavor factor I lose without onions. Loved, loved, loved the recipe. Had the right texture and mouth feel of the carb overload old recipes.

July 9, 2021 at 5:49 amI make this dish often now! I ABSOLUTLEY cannot get enough of it. I tweak it here and there every time I make it, but pretty much stick to the recipe for the most part. (adding garlic/dry mustard/double mushrooms) It’s one of my favorites. I like it better than the traditional tuna casserole I grew up on.

October 30, 2021 at 5:24 pmThis is a great, and easy, casserole. I also do some tweaking, per husband, and we’ve used crab meat, and salmon, in place of the tuna. All three meats come out great in this. One thing we know from making this several times, the celery is a must. It not only adds flavor but crunch too. Hubbie says it’s just like stuffing, can’t make without the celery.

February 3, 2022 at 3:14 pmYou could make some low-carb bread and dry it out and bake it to make bread crumbs. Or do you have low carb crackers there? Those could be crumbled up and placed on top.

April 23, 2022 at 2:06 pmThis was quite good as far as tuna casseroles go. I MIGHT have indulged in the cheese component a bit more than the recipe calls for.
The pork rinds I used ended up being kimchi flavored (who DOES that with pork rinds???) and I didn’t notice until I brought them home. They did not lend a positive aspect to the dish.
All in all it was quite good.
9 out of 10 would bake again.
