Easy Keto Pizza
Start by preheating the oven to 425.
First make the crust. Combine the mozzarella, almond flour, garlic powder in salt in a microwave-safe bowl, and stir until well blended. Microwave for 25 seconds. Knead the dough with your hands for a few seconds.
Add the egg yolk while the dough is still warm. Knead until combined and roll into a ball. Form a disk as if you were making a hamburger patty. Place the dough on a parchment-lined baking sheet and use your hands to press into a circle 5 to 6 inches in diameter and about 1⁄4 inch thick. You can also use a rolling pin. If the dough cools too much to form properly, place it back in the microwave for 10 seconds.
Use a fork to poke holes in several places throughout the crust before baking. Bake on the top rack for 8 to 10 minutes, until the crust is golden brown.
Now you’ll make your pizza! Remove the crust from the oven and flip it over. Top the flatter side with the pizza sauce and sprinkle with half of the cheese. Add the pepperoni slices (and any other toppings,) then sprinkle with the remaining cheese. Bake for another 3 to 4 minutes, until the cheese is melted.

April 11, 2018 at 12:31 pmGreat recipe! Inspired me to buy the book!
I’m fairly new to Keto and was really missing pizza. I have a question on the way the macros are calculated .. I looked at the nutrition information for the sauce and saw something that’s puzzled me on a number of labels. under the Carbohydrates section of the label, it states there are 6 grams of carbs per serving. It breaks Total Carbohydrate down by stating that 1 gram is dietary fiber and 3 grams per serving are sugars. That makes 4 grams of carbohydrate. There are 6 grams total per serving. Where/what are the other two grams of carbohydrate?
When I’m figuring the macros in a situation like this, are the net carbs per serving 6 (Total Carbs) – 1 (Fiber) for 5 net carbs per serving or 6 (Total Carbs) – 3 (Everything not labeled sugar) for 3 net carbs per serving? Probably a newb question but one I haven’t found a general answer to.
I’m looking forward to making this with my favorite toppings.

April 12, 2018 at 5:24 amHi Lynda! You can possibly use ground flax meal or coconut flour, you just might have to play around with the amounts.

April 30, 2018 at 12:56 amHi! Thank you for posting this recipe. I can’t wait to try it. The only issue is that I don’t use a microwave. What can I use to heat up the flour mixture.

January 16, 2019 at 3:33 pmI would think you could use a double boiler or a glass bowl over boiling water if you don’t have one. But that is just a guess and not sure how long it would take.
I use that method to make my cheese sauces.

June 7, 2018 at 10:17 pmHi there, very new to your site, but glad I found you! Wanted to ask if the crusts could be put together, then frozen either before or after baking? I think it would be awesome to have a pre-made stack of crusts ready to make pizzas with. What are your thoughts on this? Thanks so much.
Suzanne
January 13, 2020 at 8:49 pmYes you can freeze precooked crusts! They also can be stored in the refrigerator for up to a week. They are great to have on hand.

June 18, 2018 at 9:53 pmDo you think I’d be able to make a couple of these and freeze them so I could take them to work? I’m just wondering if they’d reheat in the microwave since we don’t have an over or toaster oven. Thanks!

August 27, 2018 at 3:36 pmThis is one of my favorite go to’s – have you ever tried freezing the dough to save time so you can just pop them in the oven when you’re ready to make or would the ingredients not do well that way you think?
Suzanne
January 27, 2020 at 9:52 pmHi Macy, I actually cook the dough first and then freeze it.

October 15, 2018 at 5:09 pmWow, this is yum! And, easy to make. Besides this being a great meal for my family, I will make this for entertaining with friends who are not on a Keto Diet! I love that you can spread it thin and it stays that way – perfect for a light Hors d’oeuvre! The cheese and almond pair well with all toppings. It was very surprising to me that this was so delightful, a keeper!

February 12, 2019 at 5:40 amI absolutely LOVE this crust!! I dislike the consistency of almond and coconut flour, but this is AMAZING. So far I have only found recipes that taste too much like egg, cant even taste it in this. I made mine thin and fell in love. I am going to use this for my taco shells also.

September 5, 2019 at 10:42 pmI love that this is a small pizza! It have me a chance to try it out before making too much. The crust was nice and crispy…though a little dense. I used Rao’s marinara–4grand in a half cup.(I used a tablespoon). I used a whole egg. Not sure why just the yolk–carb count? Added green pepper, mushroom, some onion and pepperoni. Delicious! Keep these recipes coming!

February 21, 2022 at 6:41 amGood Morning! I am getting ready to meal prep and I wanted to make some extra pizza crusts that I can freeze. While I see that the crust is freezable, I need to see if the crusts can be rolled out flat an frozen or if you can just freeze the dough before you flatten it out. This might be a simple question, but cooking is not my gift and I don’t know if it makes a difference or not.
I have both of your books and was amazed at how easy they are to follow and how simple the recipes are to make. Usually, it takes me so long to make something (that typically never turns out right), that by the time I am done cooking, I have no interest whatsoever in the finished product. After meal prepping last weekend, I ate keto all week and dropped 5 pounds (with the operative word in that sentence being ‘dropped’ !) I know it’s mostly water weight, but it encouraging to know that I can eat keto meals all week that I actually like. Thanks for the time and effort you took to share and make accessible, your knowledge and experience.
Suzanne
March 21, 2022 at 8:57 amAw, thank you so much! That means so much to me. I would roll it out before freezing.
