NutriBullet Balance & Creamy Cauliflower Comfort Soup

Hey guys!

I’ve teamed up with one of my favorite companies, NutriBullet, to share about the new NutriBullet Balance! This incredible and compact nutrient extractor connects to your smart device via Bluetooth and shows you exact measurements and macros of each ingredient in real time as you add them!

In the NutriBullet Balance app you’ll also find a lot of cool features like recipes, shopping lists and unique user profile settings (there is even a wellness goals setting for Ketogenic!). While scrolling through the recipes, I stumbled upon this easy, 5 ingredient cauliflower soup recipe and decided to give it a try! (Spoiler alert: It was so easy to make and turned out great!)

Note: Not all recipes in the app are keto friendly, but you do have the option to add your own! Also, hot ingredients can’t be used in the Balance, so be sure to cool all items before use.

Now on to the soup…

Made with only 5 simple ingredients!

  • 2 cups Almond Milk, unsweetened
  • 2 cups Cauliflower, chopped, streamed and then cooled. (No hot items in the NutriBullet)
  • 1/4 tsp Sea Salt
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Black Pepper, ground

  • Herbs (Optional)

  1. Add all ingredients into the NutriBullet Balance as instructed and blend for 45 seconds. Transfer to a microwave safe bowl and heat to desired temperature.

Using the NutriBullet Balance was easy (plus easy to clean!), and very user friendly! Due to having really limited counter space, I really love that the Balance is smaller than a traditional blender and easy to store. The Bluetooth connection is really amazing and it’s so awesome to see how well it measures the ingredients as you add them! The Balance does a great job with macro calculation and I really enjoyed using it!

I hope you all enjoy this delicious and simple recipe, and let me know what you think about this new NutriBullet Balance!

Lots of love,

This post is sponsored by NutriBullet, but the opinions are my own and true. I would never share anything with all of you that I don’t truly love myself! Thank you to NutriBullet for sharing such a great product with me!

Holiday Outlook & Keto Recipe Ideas

Staying on track during the holidays

It’s been said that the average American consumes a whopping 4,500 calories during the tradition Thanksgiving meal alone. I used to give myself a “holiday pass”, to eat whatever I wanted, in the name of “tradition”.  I now realize that those choices would eventually spill over to days, weeks, even years of poor eating. The key to success for me is consistency, and being prepared with keto friendly options.

Tuscan Keto Chicken

Prep Time: 10 minutes

Cook Time: 25 minutes

Serving Size: 1 Breast

Calories per serving: 511

Fat per serving: 37g

Carbs per serving: 5.25g net

Protein per serving: 41.5g

  • 4 Boneless, Skinless Chicken Breasts
  • 4 Ounces of Goat Cheese
  • 4 Garlic Cloves
  • 1/4 Cup of minced Yellow Onion
  • 8 Tablespoons of Grass-fed, Unsalted Butter
  • 1/4 Cup of Dry White Cooking Wine
  • 1/4 Cup of Fresh Lemon Juice
  • 4 Sun-dried Tomato Halves, sliced. (Approx. 1.25 OZ)
  • 6-8 Fresh Basil, chopped.
  • Olive Oil
  • Salt and Pepper

  1. Coat each breast lightly with olive oil, then season with salt and pepper.
  2. Grill chicken for approximately 15-25 mins depending on the thickness and size of each chicken breast. (Internal temp of 165F) ==5 minutes before the chicken breasts are done cooking,
  3. Add 1 Oz of goat cheese to each breast, then close the grill lid so the cheese can soften.
  4. Combine 1 TBS of butter with 1/4 cup onions and 4 freshly pressed garlic cloves in a pan.
  5. Simmer until onion and garlic are cooked.
  6. Add 1/4 cup of lemon juice and 1/4 cup of Dry white cooking wine to the onion and garlic, stir together and simmer to reduce mixture by almost half. (4-5 mins)
  7. Cube/slice remaining 7 TBS of cold butter and add to the sauce, little by little.
  8. Add sun-dried tomatoes and let simmer for (2-3 mins) as you lower the heat, so that the sauce doesn't break.
  9. Add fresh chopped basil. Toss around in the sauce, then remove from heat and set aside.
  10. Remove chicken breasts topped with goat cheese from the grill, plate, and spoon tuscan sauce equally on each breast.

Enjoy with a side of zucchini noodles, or cauliflower garlic mashed potatoes!
