It couldn’t be simpler to make this delicious meal for your family. Start by mixing the oil, salt, pepper, and chili powder in a small bowl. Coat the salmon fillets with the powder mixture and set aside while you prepare the salsa.

Next, lightly toss the diced avocados, onion, lime juice, garlic, cilantro and oil in a separate bowl. The recipe calls for 2 small avocados, but one large one will work too.  Season to taste with salt and pepper. Place the salsa in the fridge until ready to use.

Ingredients

Salmon

Avocado Salsa

  • 2 small ripe avocados or 1 large
  • 1/4 cup diced red onion
  • juice of one lime
  • 1 clove garlic minced
  • 2 tbsp chopped fresh cilantro plus more for garnish
  • 1 tsp avocado oil
  • salt and pepper to taste

Instructions

  • In a small bowl, mix oil, salt, pepper, and chili powder. Coat the salmon fillets with mixture and set aside while you prepare the salsa.

      Yes. I usually bake salmon at 450 for 12-15 mins (depending on the thickness) with the skin side down.
