What if I told you that you can have an impressive dinner on your holiday table that takes less than an hour to make? You definitely can wow your family with this delicious pistachio crusted rack of lamb! Not only will it make a beautiful focal point on your table, it takes only 10 minutes to prepare and 30 minutes to cook.
Prep couldn’t be any more simple than this! Begin by preheating the oven to 400 degrees. Line a baking sheet with aluminum foil and set aside. Thoroughly season both sides of the rack of lamb with the salt and pepper.
Next, heat 2 tablespoons of oil in a large skillet over high heat. When the oil is very hot, place the lamb in the skillet, fatty side down first. Brown each side of the lamb for 3-4 minutes. Transfer the lamb rack to the foil-lined baking sheet.
Now stir together the pistachios, Parmesan cheese, rosemary, and 1 tablespoon of olive oil in a small bowl. Spread the dijon mustard on the fat-side of the lamb. Use your hands to pat the pistachio mixture on top of mustard and press down firmly so that it sticks to the meat.
Bake for 20-25 minutes, until the crust is golden and the lamb is pink in the center, or to the doneness of your liking. Transfer to a plate and let the Pistachio Crusted Rack of Lamb rest for 10 minutes before carefully slicing in between the bones into individual chops. Enjoy!
