This recipe includes two things that I’m a big fan of, easy crock-pot (and Instant Pot) meals and homemade chili! I love being able to quickly toss some fresh ingredients into the slow cooker in the morning. Then have a hearty meal by the end of the day. This beanless chili recipe is on a weekly rotation in our house.
This is a meal that really brings our small family together, especially on cold days! We usually look forward to it all day as it simmers in the crock-pot. The smell of the chili as it fills the house is also a wonderful thing. You can smell the onion and bell peppers all throughout the house.
It’s simple to make this keto friendly recipe and will only take 15 minutes to prep. Start by browning the ground beef and sausage in a large pan. Use a wooden spoon to break up the clumps. Drain the meat and reserve half of the drippings.
Transfer the drained meat into the slow cooker and add the bell pepper, diced tomatoes, chili powder, cumin, other ingredients. Stir to combine. Cook 6-8 hours on low – you’ll know it’s ready when the veggies are soft.
Top with your favorite toppings like shredded cheese, green onions, sour cream, and/or sliced jalapenos. I also like to make our Cheddar Jalapeño Keto Cornbread Muffins as a compliment to the chili
If you have an instant pot I have added the instructions below to make this recipe in 40 minutes!
Keto Chili – Instant Pot Recipe Video:
Keto Chili Instant Pot Cooking Instructions: Ready in 40 Mins!
Prep time: 5 mins / Cook Time: 35 Mins / Total: 40 Mins
- Press the “Sauté” button on the Instant Pot.
- Add the ground beef and sausage to the pot and cook until brown.
- Once the meat is browned set Instant Pot to “keep warm/cancel”.
- Add the remaining ingredients (plus add an additional 1/3 cup of water (so 2/3 c total water) if you’re using a Instant Pot® Duo™ Nova – to avoid the burning – the original instant pot as shown in the video doesn’t require the extra water) into the Instant Pot and mix well. (No need to remove liquids as instructed in crock pot cooking method), then cover and lock the lid. Make sure the steam valve is closed.
- Select Bean/Chili setting (30 mins)
- Once the chili is done, the Instant Pot will automatically switch to the “Keep Warm” mode. Allow the pressure to release naturally or use the quick release.
- Stir chili before serving!

Storing the chili
We usually get 2-3 meals out of this chili recipe and you can double up if you want more. This recipe is great for meal planning for the week. Make sure to store in a refrigerator safe dish, I would recommend using a glass dish to prevent staining.
You can freeze this chili and it will last for weeks. Use freezer bags and portion them out properly so that you only warm-up what you plan to eat. When heating up, just pop in the microwave to heat to your desired temp.
Ingredients
Instructions

October 22, 2015 at 4:44 amLooks great, and do-able! We eat a lot of chili in my household. I have been holding off the chili tradition to find a Keto version that is as easy as our non-Keto version. I think this just might do! Will let you know how it works for me. I appreciate you sharing!

January 3, 2020 at 8:29 pmMy husband and I just started the Keto journey together. The first thing I did was buy your book. We just made this Chili and it is hands down the best chili either of us has ever had! We think it’s amazing flavor is a combination of using a slow cooker and the addition of sausage. I was worried because my husband loves his beans but the chili was so delectable that he barely missed them 😊 Thank you!

October 28, 2015 at 2:30 amHi! I’m currently on Keto…and have been finding it quite difficult! Thanks to your video’s I think I can start to cook something that tastes good! haha
Question: tomato paste, diced tomatoes in tomato sauce, and sausage, what brands did you use?? And where did you get them? (i.e trader joes, whole foods…etc)
Suzanne
October 15, 2017 at 6:44 pmI generally buy organic from my local Safeway.

November 18, 2015 at 11:31 pmSuzanne,
I am making this tonight. However, I am using Chicken thigh meat cut into small cubes. I am sure it will be tasty. I have followed your journey and admire your truth and honesty. Not just with the followers but with yourself. You are amazing and strong.

November 1, 2020 at 8:13 pmI tried this Chili recipe today, I had 10 lbs of chop meat I really needed to get rid of. It came out absolutely amazing in the instant pot. I made it 3 times today to use up all the meat. Added shredded cheddar cheese and a dollop of sour cream. Tweaked it a little by adding green chili’s.

December 1, 2015 at 9:04 amG’day Suzanne!
I’ve been on the keto diet for just short of a year. I’ve lost 25kg (55?lbs) but I’ve been disappointed with my overall progress (slow) – do you plan you meals? I think that’s my problem – I keep low carb but my overal calories are too high 🙁 I am making your chili tonight and I’ll have a good read of your website. Congratulations on your progress – you must feel like a new person 🙂

January 4, 2016 at 6:12 amThank you so much. I personally feel that it will always be important to check on the calories in vs out…so maybe try lowering your caloric intake and see how it goes. Also make sure that your protein intake isn’t too high. Checking your ketones will be helpful to see how you’re doing.

April 2, 2016 at 3:10 pmThis is fabulous… So easy to make ( I don’t have a slow cooker – I just let it simmer really low for the time period). My husband loves this, it’s his favoutrite meal! I must say I love all your recipes, they are quick, easy, yum and always turn out. ????

September 6, 2016 at 2:10 amSuzanne, I made this recipe after seeing it in a magazine. The only problem was there were no counts for anything in the magazine so not knowing about this site first I wrote down everything and did the math myself. You can imagine my horror
when I came up with 21 carbs a serving. Then I happened to find your ketokarma and found the recipe here and you only have about 7 carbs a serving. I’m assuming you are subtracting fiber and netting the carbs. I read I wasn’t suppose to do that on the Keto diet. I just started 4 days ago so needless to say I’m a little confused. The tomato paste and diced tomatoes were where most of the carbs came from but not sure if it has that much fiber overall.
Suzanne
October 30, 2016 at 5:26 pmHey there. Yes, I count net carbs. Fiber minus total carbs.

May 2, 2018 at 3:23 amOmg Suzanne your recipes are fool proof and soooo delicious ! I’ve made your chili , peanut butter bites and pizza and although my preparation was hasty at times, they All turned out amazing . My hubby ate some of my chili too and he’s not on keto. I actually like this pizza versus regular pizza because I get full off one serving versus traditional pizza where I’m stuffed w carbs and eat 30 minutes later. Thank you for sharing your recipes

November 2, 2016 at 10:23 pmI just made this chili tonight with some modifications for my family. I omitted the bell pepper since my husband doesn’t like it, and I used Mexene chili powder (so good!) without bay leaves or cumin because I didn’t have them. I also added about a tablespoon of Truvia to the pot. It is so delicious and filling and was a hit with the family! Congratulations on all your personal successes. I have struggled to lose weight for years, always failing and always feeling like nothing I tried mattered because I would eventually fail again. I started keto this summer, and fell off a couple times, but am about a month in to the most recent attempt. My hunger is usually at bay, I feel happier with myself, and just feel better overall. Thank you for all the inspiration!

November 3, 2016 at 8:58 pmThis chili recipe is so amazing!!!! I finally printed, went to the store and came home and fixed it. Very very delicious!!!! Thanks for sharing it.

February 21, 2017 at 9:22 amLooking forward to trying this! Looks so yummy 🙂 I am 6 weeks into Keto and have lost 12.2 pounds, for me that is amazing! considering I have PCOS/Endo.

April 10, 2017 at 7:59 pmJust made this chili and we loved it! Question: if I double the recipe do you have a suggestion for how long to cook the double batch?
Suzanne
May 31, 2017 at 11:39 pmThe timing would be pretty similar as the meat is already cooked.

April 21, 2017 at 12:19 amHey! What kind of beef did you use? 80/20 or 85/15 or 90/10? Maybe it doesn’t totally matter that much? Just want to stick to the numbers you have. I’ve made this a few times before for my husband’s lunches and am making it again for him next week! Love it!!
Suzanne
May 31, 2017 at 11:38 pmI usually use 80/20 or 85/15.

October 23, 2017 at 6:40 pmThis was my first “keto” meal and I can ONLY HOPE that most other keto recipes will be this delicious and satisfying!
Used lean beef and hot sausage and bought the onion and bell pepper already chopped so it made this incredibly, silly easy.

Thanks!

November 14, 2017 at 8:44 pmI like to add baby portabella mushrooms, celery and small zucchini chopped small.. Don’t miss the beans that way! It was a major hit with all my family, even the non Keto members.

November 25, 2017 at 5:11 pmI don’t know why I’m so confused about this, but what type of sausage did you use in this Keto Chili recipe….Italian, Jimmy Dean, etc?
Suzanne
November 25, 2017 at 7:36 pmYou can use any type you like! Jimmy dean regular sausage works just fine!

December 11, 2017 at 11:18 pmHi Suzanne. I am trying to keep my protein low as well as low carbs. Any suggestions? I could just leave out the sausage or just cut down on the meat but the protein adds up very quickly too. Cheers and well done!
Suzanne
December 14, 2017 at 5:16 amHonestly, its all about meal planning if you want to hit specific macros! Thanks for your support!

December 17, 2017 at 11:39 pmThis may sound silly but what type of sausage did you use?

April 10, 2018 at 4:01 amI generally use just regular mild sausage.
John
January 3, 2018 at 5:53 pmThis is very helpful thanks for this.

January 12, 2018 at 5:36 pmI don’t care for sausage , can you just use all ground beef? or should I add a different meat for more flavor?
Thank you!

April 10, 2018 at 3:58 amHamburger meat is just fine!

January 17, 2018 at 9:52 pmI made the chili today and it was delicious. I didn’t substitute anything or add any salt and it was perfect. The sour cream is a must and adds a nice, cool balance. I can’t wait to try your other recipes from the book. Thank you!

January 26, 2018 at 12:35 amI decided to go on Keto not having a lot of information. I bought your book and made this recipe—it was so good! I have gone back and watched your videos and have been so inspired by you. Thank you for sharing your experience and your knowledge you’ve gained.

February 3, 2018 at 2:47 pmI absolutely love this chili!!! I add Adobo and Sazon seasoning, basically the two most important seasonings to Puerto Ricans, when I cook the meat. I also add a tablespoon of Sofrito to the chili mix. I’ve won two chili cook-offs with this mix!!!! Hahaha I call it Boricua Keto Chili! Thank you so much. 🙂

February 5, 2018 at 12:42 amI added fire roasted tomatoes to give it a smoky taste!

February 5, 2018 at 2:27 amThis was bomb!! I omitted the bell pepper due to digestion issues and substituted diced mushrooms.. also added 1tbl Worcestershire sauce and upped the chili powder. Topped with diced avocado, shredded cheese, sour cream, and chopped cilantro. It’s a keeper for sure!

April 2, 2018 at 10:46 pmLoved the Keto chili! Was a hit with my hubby as well. The recipe says it makes 6 servings, but what is a serving size? I’ve noted several of the recipes don’t indicate a specific serving size.
Please help! Thanks!
Suzanne
April 10, 2018 at 3:46 am1 cup! : )
Maria
April 13, 2018 at 10:50 pmMade this today and it was delicious. Unfortunately, I only had a 28oz can of diced tomatoes, so I used the whole thing, which likely added a few extra carbs. Because of the extra tomatoes, I increased the spices a bit. It was really delicious and I will definitely make this again. My husband enjoyed two helpings. Reluctantly, I stopped at one serving.
Jessica
April 18, 2018 at 12:12 pmThis chili was great! I made it with 3 lbs ground turkey and 2 cans of diced tomatoes but kept everything else the same. It turned out super chunky and meaty; it was wonderful and very easy! Thank you for sharing this recipe.
Vicki
April 22, 2018 at 11:15 pmFirst, I love the book!!! Made the chili tonight, didn’t have cumin so I just added extra chili powder. I prefer a little spicier so I will get spicy chili powder. My usual chili has bacon and lot so beans. I added a can of soy black beans (1 net carb/serving) and my son asked to add bacon next time we have it. Thanks so much for you recipes and sharing your story.

April 29, 2018 at 4:19 pmI bought the spiral bound book and love it. Just started last Tuesday so have lost 4.8# in less than a week.
I made this chili last night and had some over a hot dog. So good!!! Love the creamed spinach recipe also. Lots more bookmarked to make.
I love your book and with it I have already lost the cravings for carbs.

September 13, 2018 at 10:29 pmI LOVE Chilli and have missed it so much since going Keto. This recipe is fantastic, I just made my first batch and don’t miss the beans at all! It’s hard for me to have Chilli without some crackers on the side, so I grabbed some Whisps parmesan crisps and it went beautifully with this. I also added some Smoked Paprika and it gave it the most smoky flavor, it gave it more of a slightly barbecue taste. Thanks so much for sharing!

October 24, 2018 at 9:09 pmJust made a double batch of this (and it was my first time making it). I didn’t have ‘diced tomatoes’ on hand so I used 1 can of fire roasted diced tomatoes and 1 can of stewed Mexican flavored tomatoes. Amazing! We will be making this one again!

November 2, 2018 at 8:08 pmMaking this right now! It’s smells DEVINE! Can’t wait to try it out. My parents are on the Keto diet and I invited them over for dinner tonight, so I’m trying to ensure I keep them on track and make something “keto friendly.” Thanks for a great website full of ideas.

November 24, 2018 at 11:29 pmMade this tonight with hot sausage and a can of fire roasted dices tomatoes with chipotle peppers… so easy in the Instant Pot and delicious! Thanks for the recipe and inspiration over the years!!

December 8, 2018 at 6:48 pmI like it! The first time I made it, I was in a hurry and cooked it in the pressure cooker–still very good. Today, I’m not in a rush, but I think I’ll use the pressure cooker anyway. Patience isn’t one of my best virtues. I appreciate your Simply Keto book that helped me get started. I’ve lost 23 lb. in just shy of 11 weeks. Only 17 lb. to go! Last week, my daughter called to thank me for telling my granddaughter, who told her mother, that I was losing weight with keto. She checked it out, online, and lost 15 lb. in 3 weeks. Of course, she’s thrilled. Thanks for your help, Suzanne!

February 3, 2019 at 3:16 pmMy mom and I recently started keto. We are loving this chili! I can’t seem to find what the serving size is. I have been doing 1/2 cup as 1 serving. Is that right? I’m sure I am just overlooking the serving size. Can you help?!
Suzanne
November 3, 2019 at 7:36 pmOne cup is a serving!

February 8, 2019 at 5:34 pmFirst off, my boyfriend and I LOVE this chili! We make it regularly and it is 100% one of his favorite Keto meals we make!
Question: Has anyone tried cooking this on high in the crockpot. I want to make it this evening but won’t have 6-8 hours to wait for it to be done.
Lynn
February 13, 2019 at 7:52 pmHi Suzanne, I’m preparing this for dinner tonight after reading all the reviews. I used to use My Fitness Pal before starting keto recently. I noticed that it doesn’t track net carbs so I didn’t think it would work for keto. Since you’re using it I thought I’d ask you how you make it work. Thanks so much!
Suzanne
January 13, 2020 at 11:12 pmHi Lynn, there is an app called carbmanager that will keep track of net carbs!
Mary
February 17, 2019 at 4:59 pmWe have used this over and over, adding our own special touches, but as a base, it works great! Everyone loves it and it’s SO easy! When I eat it at work, co-workers come over to my desk sniffing and asking what I’m eating, and asking for the recipe.

February 20, 2019 at 1:50 amI loved this chili. Super satisfying and easy. I didn’t even miss the crackers.

March 19, 2019 at 9:04 pmOK, I just couldn’t take the HEAVENLY SMELL and HAD to take a taste test!!! This is beyond YUMMY!! I can’t wait to eat it as is or put it over zucchini spaghetti or over the biscuit recipe for b-fast.

March 31, 2019 at 3:56 amDear Suzanne: We had your keto chili for supper tonight. It’s very easy to prepare and we loved it. I picked up some of the ingredients around 1 p.m., so by the time I got home it was a little late to use the crock pot so I put the ingredients into my pressure cooker and cooked it on the stove top over very low heat for 2 hours, with no steam. It was excellent, I like the proportions of ingredients. This will be our go-to chili from now on. I ordered your book and can’t wait to begin using your keto recipes. I have friends and relatives who may enjoy cooking and eating keto.
I lost 50+/- pounds (I no longer have a scale in the house) about 15 years ago and have kept it off but I love keto recipes and hope the book will keep my on the right path and going in the right direction.
I also bought the Tidying Up book a few months ago. I’m the do-it-myself type, I completed a reorganization of my clothes closet today and dropped of a huge load of clothes to Goodwill today. Next I’ll pare back my thousand (or more) books.
Thanks for your website. I’m so glad I found you.
Be well.
Janice
April 1, 2019 at 1:49 pmSo delicious and easy to make.

May 14, 2019 at 11:35 pmSuzanne, I’m not on Keto but my wife is, and the whole family enjoys this chili from the pressure cooker at least twice per month! We have the hard copy of your book, and today I purchased the ebook version for my phone and tablet as well. Great stuff!

May 16, 2019 at 3:43 pmLove this recipe and make it often in my instant pot. I do add beans for my kids, but the recipe is delicious for those on keto and add beans if you are not.

August 10, 2019 at 4:17 pmMaking this tonight! I do not have an instant pot so will improvise with my pot-on-the-stove LOL. I must add, your cream cheese pancakes are fantastic. I have made them twice now!
Suzanne
December 11, 2019 at 6:26 amI often like the stovetop method myself too when I don’t feel like taking out my instant pot. I’m so glad you like the pancakes!

August 26, 2019 at 7:32 pmis the 7.2 carbs per serving? or total?
Suzanne
September 15, 2019 at 10:56 pmPer serving due to the veggies and tomato paste.
Jayne
September 17, 2019 at 11:10 pmMy husband and I LOVED this chili recipe. Agree completely, that you don’t miss the beans. Sadly, I get 15.2 net carbs using Hunt’s diced tomatoes and Hunt’s tomato paste. I’m guessing that’s the reason the number is so high but that appeared to be the lowest net carb tomato product for this recipe. Do you use a specific brand to keep the carbs low? Would love to keep making this but my net carb limit is 17 and 15.2 the way I made this doesn’t leave room for your delicious “Pop Pop PB Balls 😉 Thanks for all the delicious “diet” food!

September 27, 2019 at 1:01 amSecond time I’ve made this and the whole family loves it. I love making Chili and typically add 3 different kind of beans. With this recipe I don’t miss them at all. I’ve been making a double batch just to make sure we have leftovers! Tonight we added some hot diced green chili’s, (I forgot to check the carbs on that addition). The only other thing I do is add some Cayenne pepper. Delicious!

October 4, 2019 at 11:03 pmthis is excellent and high recommend! Thank you Susan for the Instant Pot recipes – so fun and easy for on the go. I added a little fennel – just because we enjoy more of a “sausage flavour”. The recipe is excellent! Have all your books and am on preorder for your new one!

January 11, 2020 at 11:03 pmLove this but my instant pot does not have a chili/beans setting…I’m setting to Manual high pressure 30 and hoping for the best.

January 12, 2020 at 2:57 amSo is one serving of the chili 1 cup? And it has 387 calories per one cup serving and 7.2 carbs also per one cup serving?
Just want to make sure I’m tracking my carbs and portions/servings from the recipe correctly.

January 13, 2020 at 8:21 pmI just updated the nutrition information with the complete breakdown of carbs. There is 7.9 net carbs in one cup.

May 4, 2020 at 12:53 pmI started on this Keto journey to help my son who has just been diagnosed with Type I Diabetes. I’ve been carefully monitoring portion size and carbs, etc. and my son has now lost 11 pounds in 3 weeks and his sugar level ranges from 89 to 110. When he came home from the hospital he was at 222 and when he went to the hospital in critical condition, he was at 523. Thank you for the delicious recipes!
Where do I buy the spiral bound book? I have the bound book but it is too clumsy to use. I end up photographing the recipes and using my phone.

May 7, 2020 at 11:00 pmHey there. Sending you and your son lots of love. I’m so happy to hear that he is doing better! You can take a copy of my books to an office supply store and they do the spiral bound for only a few dollars!

September 21, 2020 at 4:03 pmIs there an adaptable recipe that I can use diced steak for? Or would this be just something I can sub it in/out for? Thanks!

September 23, 2020 at 6:57 pmHi there! you could use diced steak in place of either the ground beef or ground sausage, or both. I am sure it would turn out great!

October 18, 2020 at 3:32 pmI’m 31 weeks and 2 days pregnant. I was diagnosed with gestational diabetes about two weeks ago and found this recipe in a magazine book. We tried it today but cut the sausage in half (hubby didn’t want to use all of his good sausage) and it was amazing. Not too spicy for me, no beans so no prego gas haha, and very filling. I will definitely be bookmarking your website for more recipes! Thank you so much!

October 21, 2020 at 12:28 pmCan you make this without using sausage? I”m not a fan of sausage

October 21, 2020 at 7:13 pmHi There! You could substitute it with plain ground pork or another pound of ground beef. Enjoy!

October 26, 2020 at 7:07 pmThis was so delicious! I ended up using the Instant Pot version when I ran short on time last week, and it was an incredible meal with minimal time & effort. I did see the dreaded “burn” notification a few minutes in so I released the steam, did a quick deglazing with the beer I happened to be sipping, and started over the chili setting. Turned out amazing 😉 Thank you!

December 11, 2020 at 3:36 amHey Suzanne,
I’m new to keto and tracking macros etc, I have one question this recipe says 6 servings I’ve calculated my target in take so how would I know what portion size to have? My partner is also giving the keto diet ago and she needs more than me. So how would I calculate this?
Suzanne
December 14, 2020 at 9:50 amHey there. You basically just eat more or less of each recipe depending on your macro goals for the day.

May 11, 2021 at 7:33 amWhat kind of sausage?
Suzanne

July 8, 2021 at 5:03 pmI usually don’t love chili in the summer when it is 95 degree’s outside but for some reason I was intrigued by this recipe and I am very glad that I did! The cumin and garlic cloves hit just right for me and in my opinion made the entire recipe. Can’t wait to share this with some of my clients as well. Thank you and I am excited to try more of your recipes! 🙂
