This is one of my favorite keto recipes, keto twice baked cauliflower casserole. I make it at least once a week and my family loves it. You can use it as a side dish, or as a meal on its own. I also make this cauliflower bake whenever I feel like a craving for mash potatoes or loaded baked potatoes.
It really hits the spot. I also do a lot of meal prepping with this recipe, as it stores really well!
The cauliflower is cooked 2 ways. First, it’s boiled to soften it, and after that, it’s baked with all kinds of yummy ingredients. As a result, you get a creamy, flavorful casserole that your family will devour. Think of everything you’d put on a loaded mashed potato and it’s in this casserole!
Start by frying 6 slices of bacon. You can use Bacon Bits or pre-cooked bacon if you want to take a shortcut. Once the bacon is done, chop it into small pieces.
Meanwhile, as the bacon fries, boil a pot of water and add salt. Next, cut the stem and core from the cauliflower and disregard.
After that, chop the remaining cauliflower into small pieces, and add to the boiling salted water ( See below for alternative Instant Pot instructions for cooking the cauliflower). Allow cooking for 15-20 minutes. Drain well.
Add the drained cauliflower and use a potato masher or mixing whisk to get the mashed cauliflower to the right consistency. Spread it into a casserole dish, top with sharp cheddar cheese and remaining bacon. Bake 15-20 minutes and this hearty cauliflower casserole is ready!
Instant Pot Instructions
You can choose to steam your cauliflower in your instant pot instead of boiling, which is my favorite way to soften the cauliflower. Remove the stem and core from the cauliflower. Next, break apart the cauliflower florets and place them into the instant pot along with one cup of water.
Close the lid and set it to seal. Set to steam on high for 15 mins, or use the steam preset and select broccoli. Release the steam when it is done. Next, strain the cauliflower to remove any excess water and continue with the recipe.
In a large mixing bowl add your cheeses, sour cream, green onions, and 4 pieces of chopped cooked bacon. If you want a creamier consistency, you can add the optional heavy whipping cream as well.
Add the drained cauliflower and use a potato masher or mixing whisk to get to the desired consistency. Spread it into a casserole dish, top with cheddar cheese and remaining bacon. Bake 15-20 minutes and this hearty keto twice baked cauliflower casserole is ready!

Instructions
8 steps- Fry the bacon in a large skillet over medium heat. Transfer to a paper-towel lined plate. Allow to cool and then chop.
- Core the cauliflower and chop the florets into small pieces.
- In a large pot of boiling salted water, boil the cauliflower until soft (Or use your instant pot to steam the cauliflower, instructions in the post above). 15-18 minutes for a chunkier texture or 20-22 minutes for a super smooth texture.
- In a large mixing bowl, combine the sour cream, cream cheese, parmesan cheese, green onions, garlic powder, and two-thirds of the bacon.
- Preheat oven to 350 degrees
- Drain cauliflower well, then pour the cauliflower over the cream cheese mixture in the bowl. Mash with a potato masher or whisk until it is the consistency of your liking. Season to taste with salt and pepper.
- Spread the cauliflower mixture evenly in a 3 qt. casserole dish. Top with the cheddar cheese and remaining bacon.
- Bake for 15-20 minutes, until the cheese is melted. Garnish with chopped green onions.
Another family favorite is this Keto Cheeseburger Casserole. Yum!

January 4, 2016 at 6:00 amIt reheats very well, but doesn’t do as well with being frozen and then defrosted. Sadly cauliflower just holds a lot of water so when you thaw it turns soupy. That being said it lasts in the fridge a few days and does great with reheating.

April 12, 2016 at 6:13 amYou add the garlic with all of the other ingredients right before you pour the cauliflower on top. The consistency is up to you, but I like for it to be smooth, so I boil the cauliflower for about 18-20 mins. Baking it is just to melt the cheese and warm it through, so 15 mins at 350 is perfect. Enjoy!

The texture of the cauliflower was a little “grainy”, for lack of a better word, and I expected it to be more creamy. I used full fat cream cheese, full fat sour cream, and a splash of heavy cream (didn’t have time to measure because I’d already drained the cauli).
Do you think that I didn’t cook the cauliflower long enough? What’s the best way to test that it’s tender enough?
I’m going to try it again because it is so simple and I want to get it right. A side dish that I can scoop and reheat – yes please!

November 28, 2016 at 12:48 amI made this and I’m definitely not a cauliflower taste fan, when it first came out of the oven i thought it didn’t taste all that great as the cauliflower taste was strong. However I had made it as lunch prep for the coming week so I served it out into little containers with cut up sausage and put it in the fridge. Re-heated at work today and it was much better! it had lost a little of the cauliflower taste and was perfect with the beef sausage, also not too soggy, no extra liquid really came out but I made sure to not freeze any portions as you mentioned it didn’t freeze well. Thank you for the recipe, it is so hard sometimes to find recipes that are suitable for people who need to make lunches for the whole week in advance, and I also don’t feed a family, just myself, so it can be disheartening when every recipe serves 6+! I think i will make this recipe again.

The next day I would warm the cauliflower mixture in the oven for 10-15 mins and then top with cheese and bacon and let the cheese melt for another 10-15 mins.

Then I threw the drained veggie back on high heat and began stirring them. It removed the extra water and they were soft enough that as I stirred, it began mashing and as more water came out, it evaporated too. I stopped before it started sticking to the pan and I then whipped everything up and baked it. It was thick, not runny, and were amazing! I will for sure make these all the time!

Unfortunately, most dairy products do not freeze very well as it changes the texture and can separate. However, you can prepare the entire casserole ahead of time and keep it in the fridge a few days before you want to use it. You will just have to cook it for 5-10 minutes more than the original cook time to make sure it is warmed all the way through.
