Fat bombs are a great way to enjoy a keto treat, without any sugar. These pecan fat bombs get their sweetness from Brown Swerve and sugar-free maple syrup. These sweet little fat bombs are like little bite-size pecan pies. This recipe makes 9 servings of two fat bombs each, so it’s perfect for meal prepping for the week.
How To Make Keto-Friendly Pecan Fat Bombs
Start by toasting the chopped pecans, almond flour, and shredded coconut, in a large saucepan over medium heat. Make sure to stir regularly for about 3 minutes, until the finely chopped pecan halves are fragrant. You’ll want to keep a very close eye on these because they can burn quickly!
Next, mix the toasted pecans, almond flour, shredded coconut, melted butter, Swerve, maple syrup, and a pinch of salt in a large bowl until everything is well incorporated.
Place the pecan mixture in the freezer for about 30 minutes to cool completely. You’ll want the mixture to be firm but not too frozen to scoop into balls.
Roll the chilled pecan mixture into 18 equal-sized balls. It’ll be about 1 tablespoon each. Place the balls on a baking sheet, tray, or plate lined with parchment paper. Remember that the tray will need to fit into your freezer!
Place the pecan fat bombs back in the freezer and freeze for an additional hour before transferring to an airtight container to store in the freezer until ready to serve.
